5 Ingredient Pumpkin Muffins

Ooooh spooky muffin liners.  I’ve had these for over three years.

I’ve been experimenting lately with mayonnaise in baked goods.  It sounds kind of gross, I know.  Or maybe it doesn’t.  It sounds gross to me because I was raised in a mayonnaise-free household.  My mom doesn’t like mayo so we never had it in the house.  I like mayo now, although I don’t use it very much.

Last weekend I was thinking about mayonnaise and how it’s mostly egg and oil, and how I could use that in a baked good.  I challenged myself to make a muffin using mayonnaise and only four other ingredients.
Mayo, sugar, flour, baking powder and pumpkin were my five ingredients.  They turned out!  They were really good, and so light!  I was surprised it worked out.  You can’t taste the mayonnaise at all.  Now, to make these even better, I would suggest adding a little vanilla, salt, and pumpkin pie spice.

Oh, and these are incredibly easy to make.  This seems like a good recipe for busy moms and dads.

5 Ingredient Pumpkin Muffins

1/2 cup canned pumpkin puree
1/2 cup mayonnaise
1/2 cup granulated sugar
2 teaspoons baking powder
3/4 cup all-purpose flour

Optional ingredients: 1/2 teaspoon vanilla extract, 1/4 teaspoon salt, 1/2 teaspoon pumpkin pie spice

Heat oven to 350 degrees F.  Line 6 muffin cups with paper liners.

In a medium mixing bowl, whisk together pumpkin, mayonnaise, sugar, and baking powder until well combined.  Whisk in flour until just combined.  Divide batter into muffin cups.  Bake 15-20 minutes, or until well risen, and cake center springs back when lightly touched.  Cool 5 minutes before transferring muffins to a wire rack to cool.

Makes 6 muffins

    I came across your recipe as I am trying to use up pantry staples before I make my next grocery trip.

    I didn’t have any sugar (not even brown!) So I decided to drizzle some honey in for sweetness, sprinkled in a good amount of cinnamon and pumpkin pie spice and then topped with the last of the mini chocolate chips and zig zagged some cookie icing across them.
    THEY WERE DELICIOUS!
