Citrus Refresher

Citrus Refresher

Every since I’ve been pregnant, I’ve been craving foods that I never really cared for before… soda, sub sandwiches, bean burrito supremes… Things I had cut out of my diet years ago. Unfortunately for me, my midwife says that most of those foods are definitely a “no”.  I mean they won’t even let me drink orange juice, so soda is definitely off the table.  But, I can drink freshly squeezed juice… So lately to kill that craving, I’ve been flavoring mineral water with fruit. This one is close to Fresca, my favorite soda.  It’s not exactly like Fresca, but it is close.  Light, grapefruit-y, and refreshing.  It certainly hits the spot and keeps me from picking up a six pack on my way home from work… I’m talking soda pop of course!

The nice thing about this drink it that it is sugar/corn syrup free.  I used raw honey to create the syrup, but I will warn you that raw honey has a very distinct flavor.  I don’t mind it, but if you aren’t a fan of honey, I might sub agave nectar for the sweetener.

Citrus Refresher

Ingredients:

For the syrup:
4 grapefruits, juiced (about 2 cups)
1/2 cup water
1 lemon juiced, (about 1/4 cup)
2 tablespoons lime juice
1/2 cup raw honey or agave nectar (honey will have a stronger flavor)

For serving:
Ice
1 cup mineral water or club soda

Method:

1. Bring water and juices to a boil.  Add honey or agave nectar.  Reduce heat and let simmer for about 12 minutes or until the liquid has been reduced to 2 cups.

2. Remove from heat and store in a heat safe, airtight container. Let cool completely. Syrup can be refrigerated for up to two weeks.

2. To serve, spoon 3 tablespoons syrup to one cup club soda.  Stir well and add ice.
