Easy Cookie Base

This recipe is a very simple, easy cookie base which you can customize to your liking.  They are incredibly easy to whip up, and to modify as well. This seems to be the theme among my recipes!  I love simple bases that can be changed depending on what you’re in the mood for, and this recipe is the best example of that.

Ingredients:

2 ripe bananas

2 cups rolled oats

1 tsp baking powder

Pinch of salt

(that’s it!)

Method:

Preheat the oven to 175°C (350°F).

Mash banana and combine with oats.  Add baking powder and salt and mix together.

Now is the fun part.  Add whatever you want!  Dark chocolate chips, peanut butter, chia seeds, raisins, nuts, the possibilities are endless.

For these photos I added 1 tbsp honey, ¼ cup raisins and a dash of cinnamon and vanilla extract for a really simple cookie.

Bake in the oven for 10-12 minutes.  Makes 12-15 small cookies.
