Asparagus With Fried Sage

This side dish is elevated by the “fried” sage, which adds so much flavor to the asparagus. Sage is one of my favorite herbs, & smells fantastic, especially when cooked to a crisp in butter!

INGREDIENTS

2 tablespoons butter (preferably grass fed)
2 tablespoons minced, fresh sage
3 cups asparagus, diced diagonally, tough ends removed
salt & pepper to taste


PREPARATION

In a large skillet, melt the butter over medium heat. Add the minced sage, & sauté until it starts to crisp & brown. Add the asparagus & sauté until tender, but still crisp, about 5 minutes. Season with salt & pepper.
