Lemon, Butter & Caper Salmon

This meal can literally be on the table from start to finish in 15 minutes with very little clean up. I almost feel silly sharing it but I figured that people can always use another easy weeknight dinner idea. The lemon, butter, capers, and thyme create an instant sauce that makes the fish taste so, so delicious. Enjoy!

Ingredients

  • 1 salmon fillet (1/2 pound per person)
  • 3-4 tablespoons unsalted butter, cut into pieces
  • 1 teaspoon fresh thyme leaves, chopped (optional)
  • 1 tablespoon chopped capers
  • 1 lemon, cut into thin slices
  • salt and pepper to taste
  1. Preheat the oven to 350 degrees. Place the salmon in a baking dish. Dot the top with the butter. Sprinkle with salt and pepper. Add the lemon slices, herbs, and capers…THAT’S IT!
  2. Bake for 10-15 minutes until the fish flakes with a fork.
